Saint-Aubin may be used for white Chardonnay as the main grape variety. The production consists of around 75% white wine, and 25% red wine. There are no Grand Cru vineyards within the Saint-Aubin .The village of Saint Aubin is an Appellation Origine Controle . Although Dents de Chien lies just yards away from En Rémilly, its soils are dramatically different; ruddy-toned and densely packed. Saint-Aubin has much to offer. Dents de Chien - 'Dog's teeth' in French - is named after the characteristic triangular white stones that litter the marl-rich soils of this vineyard.Saint-Aubin is the perfect example of the Cote de Beaume extraordinary diversity .
Tasting note: The rich, full and naturally sweet flavors do pick up the citrus character on the detailed, energetic and moderately austere finish that lingers nicely .
