Cotes de Castillon a new appelation from 1989 including nine communes. Chateau Cadet is a 20-hectare estate that’s been worked for 250 years. The cepage is 75% Merlot for that lush dark berry fruitiness and 25% Cabernet Franc for those beautiful aromatics that draw me in every time. This is a wine that transcends it’s pedigree and shows what Cotes de Castillon is capable of.
