Appellation Chablis (AOC, France.
Chablis a far north Burgundian village ,a sleepy town almost be caught in a time warp yet. Through some geological accident, this is home of one of the world's best-known white wines. Despite there being only one grape variety involved, Chardonnay, there is a huge variety of styles from which to choose, and, of course, qualities. The Chablis region located in the to the west of the city of Dijon in and this wine region became an appellation (AOC) in 1938 .The vineyards of Chablis are classified into four tiers of quality. Starting from the top, they are: Chablis Grand Cru, Chablis Premier Cru, Chablis and Petit Chablis.
The Grand cru also know Grand Cru Climats located just above the banks of the river Serein.This area include 7 vineyards the "Blanchot", "Bougros", "Les Clos", "Grenouilles", "Preuses", "Valmur" and "Vaudésir
Chablis Premier Cru is not a distinct appellation like the other three classifications, but rather a quality sub-division of the standard AOC Chablis title. Although the wines produced under this title are made according to quality controls that are halfway between those of the Chablis and Grand Cru Chablis appellations.
The Chablis must be produced from vineyards in a specifically designated area surrounding Chablis town and its nearby villages
Petit Chablis is the least prestigious of the Chablis appellations. It was created in 1944 to cover the less highly rated vineyard sites in the area, generally located on plateaux above the Premier Cru or Grand Cru sites. Since the vineyards in this area are more exposed to bad weather the wines produced is less complex and less refined than others wines made in the Chablis wine region.
